A Moment to Indulge

How could I resist a place with the namesake "indulge"? It was definitely calling out to me, Indulge Experimental Bistro. Having been recently voted as #11 of Asia's Best Bars and 2023's Best Bar in Taiwan, it was another reason for me to pop by for a visit.

In a very unassuming location in the back lanes of the Da'an District in Taipei, you will find many cozy bars and restaurants. Though Aki Wang's Indulge Experimental Bistro is just a cut above the others with its modern approach to traditional Taiwanese heritage and produce in both its mixology and cuisine.

Head bartenders Grace Tsai and Elen Su pay homage to Taiwan's heritage of tea growing in its ever-changing line up of mouth watering cocktails. The latest menu focuses around the five elements of nature; wood, fire, metal, water and earth.

We were equally impressed by the creativeness of the small dishes. Our first "experimental" dish was the Sea Urchin Bavarois with Sea Lettuce, Conch and Clementine. What an absolute delight, the creamy umami flavours of the sea urchin, conch and sea lettuce paired nicely with the citric clementine.

Our next dish was a burst of flavours with a mix of seafood including tasty red shrimp, cuttlefish and roasted barley coated asparagus.

And one of our surprising faves for the evening was the Shrimp Bisque Risotto with Australia Westholme Wagyu Beef, Ailanthus Prickly Ash and Egg Crisp. So much texture and flavour packed in such a small dish. Every bit of that dish was cleaned off the plate leaving no room for question.

And lastly we had one of their signature dishes, the Chicken Roll with cuttlefish, ginger rice paper and confit garlic.

All in all a great "experimental" experience of new flavours and textures across mixology and cuisine at Indulge Experimental Bistro. Looking forward to the next visit as new creations await!
