Next to Christmas and New Years, and of course Truffle Season, Hairy Crab Season is one of my favourite seasons of the year. Just thinking about the creamy and rich umami crab roe makes my mouth water.
There are so many ways to indulge in this delicacy, whether it is simply steamed and eaten as a whole or with morsels of crab meat and crab roe draped over other delicious dishes. My favourite certainly has to be the Hairy Crab Cream Roe draped over braised green bean noodles. The pairing of the creamy roe and these clear green bean noodles is simply perfection.
No one does this tasty dish better than Executive Chef Li Chi Wai at The Legacy House of The Rosewood Hong Kong. The Legacy House serves delicate yet flavourful Shunde cuisine from the Guangdong region in China, often referred to as one of the cradles of Cantonese cooking. The Legacy House is an exemplary representation of this refined Cantonese cuisine.
Imagine silky translucent noodles perfectly coated with creamy Hairy Crab roe and tiny morsels of crab meat. What a simply decadent and divine dish.



10 Shanghai in Causeway Bay also presents a lovely rendition of this Hairy Crab Roe noodle dish. The dish is kept on a warmer at your table to help maintain the optimal texture of the noodles and the creaminess of the Hairy Crab Roe. Opt for half a portion if you intend to order other dishes on the menu. Otherwise just happily indulge in a full portion of the noodles.

Pan sizzled Hairy Crab Xiao Long Bao is also one of my favourite dishes at 10 Shanghai. Imagine a traditional Xiao Long Bao with a crispy skin on the outside and parcels of juicy crab and pork meat ready to burst on the inside. Intense umami flavours are oozing out from every inch of this delicious crab dumpling parcel.
If you're looking for a snack with texture, try the Crispy Rice Cracker with Hairy Crab roe. The crunchiness of the rice cracker complements the silky creamy crab roe very well. Although its a small bite, it is quite filling.


If you're looking for a lighter dish, the Braised Tofu with Hairy Crab roe is a good pick. A perfect accompaniment is a bowl of white rice to soak up all of the saucy goodness of the Hairy Crab roe.

During Hairy Crab season, many restaurants in Hong Kong feature this wonderful delicacy. So definitely don't miss out and try as many Hairy Crab iterations as you can....while supplies last!
