Macau's Culinary Crown Jewel
Imperial Court at MGM Macau is one of Macau's culinary crown jewels. Chef de Cuisine Homan Tsui, with over 20 years of culinary experience, presents an innovative and modern twist to traditional Lingnan cuisine. Lingnan cuisine originates from the Tang dynasty and embraces the flavours and tradition of the Guangdong, Guanxi and the Hainan regions.
Imperial Court is a contemporary dining space with tables adorned with artisanal Liuli glassware. From the moment the first plate of dim sum arrived, I knew we were in for a treat. That oh so soft Iberico BBQ pork puff pastry simply melted in your mouth.
Next up were the Fish maw dumplings stuffed with shrimp, pork and mushrooms, giving it a nice balance to its flavours.
Two of my favourite dishes were served next. Each parcel of Crispy Fried Crab meat was wrapped meticulously. The Red Spanish Prawn dumplings carried an intense red carabinero prawn flavour that lingered in your mouth.
Following the first round of small plates, arrived my favourite dish of the day, Crispy Suckling Pig with caviar. What's not to like about this dish? The crispy suckling pig skin is gently placed atop a pillowy soft steamed bao and finished with caviar and gold flakes. A beautiful presentation of many different textures and flavours.
Chef Tsui's signature dish - crispy fried chicken skin stuffed with shrimp mousse and shavings of locally produced sous vide salted fish is certainly a must try. This complex dish is a nod to Macau's heritage as a fishing port.
A simple yet flavourful dish is the steamed three fish soup with simmered Australian spinach and crispy wolfberries in a thick and silky fish broth. Simmered for many hours, the fish broth is very sweet and smooth, with a creamy texture.
And lastly the glorious assortment of Chinese desserts, we were certainly spoilt for choice. From the deep fried sesame balls with birds nest, the sweetened black sesame rolls, the Baked butterfly puffs with lava mango to the double-boiled snow petrel with milk served in whole coconut, each dessert packed a punch.
