As we slowly emerge from the past three years, I am hopeful and dreaming of wonderful Italian summers and trattoria dining. For a little taste of Italy, you must head to Testina, a collaboration between Trippa Milano and local Hong Kong restaurant group ZS Hospitality. Trippa Milano is known for its modern approach on trattoria cuisine in Milan and was created in 2015 by Head Chef Diego Rossi and partner Pietro Caroli. Now these culinary creatives have brought this concept to Hong Kong for us to experience with Chef Marco Xodo, previously of 8½ Otto e Mezzo in Shanghai at the helm.
The signature dish at Testina is Trippa Fritta, a fried Honeycomb tripe with Rosemary and is certainly not one to be missed. I have never had tripe in fried form, only the traditional Chinese cuisine way either steamed or boiled with scallion and ginger. I must say though, fried tripe is quite tasty and I will definitely be adding it to my list of yummy treats.
A second favourite was the Chargrilled Bone Marrow with Aromatic salad. The bone marrow was juicy, fatty and buttery and nicely coated the toasted bread. The parsley and rosemary added a nice lift to the dish breaking up some of the fattiness.


We opted for another tripe dish to compare and contrast with the Trippa Fritta. Codfish tripe with Spicy Nduja and Bell Peppers. This dish was a bit spicier than we realised mainly attributable to the Nduja.

And lastly we decided to try one of the homemade pastas. The Homemade Tagliatelle with Duck Ragu did not disappoint. Rich Duck Ragu enveloped the perfectly al dente cooked tagliatelle.
