Organic dining in a beautiful Conservatory
With Spring finally here, lovely florals and organic produce are top of mind. And what better restaurant to celebrate Spring than the unique organic dining concept at Restaurant De Kas which is located inside a historical greenhouse in Amsterdam’s Frankendael Park.
"From plant to plate" is the ethos behind Restaurant De Kas, with each herb and edible flower handpicked from their own gardens in the morning and served to guests in the afternoon. Its simply that fresh.
De Kas has an indoor growing area on the premises for vegetables, herbs and wild flowers and microgreens. The outdoor garden also grows a variety of leaves and greens including purslane, oysterleaf and horseradish. Further afield within the Unesco world heritage area of Beemster, De Kas has a nursery which grows an assortment of organic and sustainable produce. De Kas also sources its ingredients from local and sustainable farms within the area.
De Kas offers only fixed menus, 3 or 4 courses during lunch and 5 or 6 courses during dinner. The menu changes daily depending on what is fresh from its gardens and at the market that day.
From garden to table our lunch tasting menu comprised of the following organic produce and ingredients; Lovage oil, Cherries, Beetroot, Samphire, Star Anise, Chanterelles, Thai Basil, Monkfish, Umeboshi, Meringue, Beurre Blanc, Verbena, Elderflower, Blackberries, Oyster Leaf, Butter Lettuce and Lemongrass.
Each ingredient had been freshly picked that day and you could very much taste its freshness with every bite.
With its high ceilings and floor to ceiling windows that allow ample sunlight, you feel like you are dining alfresco in the garden. Restaurant De Kas is certainly worth venturing to if you are visiting Amsterdam. Some of the freshest ingredients and dishes I have tasted in awhile. Very clean eating indeed.
