Imagine a tapas tower of the tastiest croquettes...miso black cod, barbeque pork rib and leek with curry powder and comte cheese. That moment you first take a bite of the miso black cod croquette...what perfection...such delicate flavours of the miso cod wrapped in a silky texture of the potato...little parcels of joy. How have I not had this before?

Esther Bonet and Pere Vendrell are the masterminds behind Sa Brisa Gastro Bar, a unique dining concept in Ibizia. Chef Gonzalo Aragüez creates a gastronomic tapas menu, inspired by international street food with South American influences.

Sa Brisa Gastro Bar is set in the heart of Ibiza town’s bustling Vara de Rey. The decor is rustic yet chic.

The avante-garde pairing of flavours is sophisticated and each dish is presented in the style of haute cuisine.

CLAMS WITH COD - tripe and chipotle chili garlic pil pil sauce

A very unique take on what looks like Clam Vongole but the noodle-like strands are actually cod tripe. An absolutely delicious and savoury dish.

GOAT CHEESE - brioche with goat, ash and kumquat cheese

Although I'm not a great fan of goat cheese, the ash added a layer of complexity and smokiness which complemented the dish well.

FOIE GRAS - terrine and puffed rice biscuits

What is there not to love about foie gras?

TARTAR - a trio of crunchy bites of spicy tuna, salmon and beef

IBIZIAN PRAWN - on creamed huitlacoche and epazote

Sweet prawns presented on a crispy lettuce wrap.

NOUGAT CANDY ICE CREAM

A lovely sweet finish to a stunning selection of tapas with a twist.
